Cashew Nut (Cashew) is actually a seed of ripe cashew fruit. Cashew is a popular dry fruit eaten on its own. It’s also used in several recipes. India, along with Vietnam and Ivory Coast, are the major producers of cashew. India is also a big center of cashew nut Processing. There are four main stages of cashew nut processing. These stages include roasting, shelling, peeling and grading. In order to produce edible cashew kernel, firstly the outer shell of raw cashew nuts has to be removed. The outer shell of cashew is very hard. It also contains a type of oil harmful for human consumption. Processing of cashew nut is a lengthy and time-consuming exercise. During our ground coverage of Kerala, Team Lallantop reached Kollam. Kollam is a big center for cashew processing.
